Daal Soup
Why We Love it
Our mother’s warming daal soup is a firm favourite. Super quick to whip up, warming but light and packed with proteins and nutrients. A quick and easy warming bowl of deliciousness that ticks the vegetarian, vegan, gluten-free boxes (if you are so inclined).
Ingredients
1 cup of lentils (we normally use orange)
2-3 chopped tomatoes
Sliced mushrooms (8-10)
1 tsp chopped Garlic
Glug of olive oil
1 cup of stock
Salt, pepper and chilli to taste
Method
Boil the lentils until soft
In the meantime fry the garlic for 1 minute or so
Add the tomatoes and cook for 5 mins or so
Add in the mushrooms and simmer for another few minutes.
In the meantime strain out the lentils and add to the tomato/mushroom mix
Dilute with stock to preferred consistency
If you want you can blend. We like ours with textureAdd salt, pepper and chilli to taste
Top with anything you fancy (ours is a seed mix) and voila
